Winter broth

Preparation time : 20 minutes. Cooking time 60 minutes. Peel and chop the carrots and celery into +- 2cm pieces. Cut the red onions into quarters. Heat the olive oil over a medium heat and brown the vegetables in a large pan, stirring them regularly.

Preparation time: 20 minutes. Start by lining your mould with cling film, arrange a layer of biscuits or sponge fingers and then brush them with the syrup. Using a bain-marie, stir together the egg yolks, sugar and honey until you have a very pale, creamy mixture.
