For the curry sauce
1 large onion, finely diced
½ garlic clove, finely chopped
1 tablespoon brown sugar
3 tablespoons curry powder
400g diced tomatoes
50ml beef stock
3 tablespoons apple cider vinegar, or to taste
1/2 teaspoon sambal oelek
Guérande sea salt
Heat the olive oil in a pan.
Add the diced onion and cook until translucent.
Sprinkle over the sugar and lightly caramelise together.
Sprinkle two tablespoons curry powder over the onion and quickly stir it in without any liquid.
Then add the tomatoes and stock and bring to the boil.
Cook for about 20 minutes, stirring regularly.
Add the garlic, gherkins and ketchup.
Season with the vinegar, salt and sambal oelek.
Leave to simmer over a low heat for 5 minutes.
Adjust the seasoning.

Cut them up into pieces, arrange on a serving dish and pour the curry sauce on top.
Sprinkle with curry powder and garnish with dried onions.
