Gold medal winner at the Paris Agricultural Show (CGA), this red wine is a wonderful embodiment of Carine Pichot’s determination to produce wines that blend “classicism with surprise”; Carine has been running Domaine de Fabrègues since 2005.
Wine of the Month – Domaine de Fabrègues, which has been in existence for hundreds of years, stands proud in the middle of 40 hectares of vines. These vines are trained using the goblet method or trellised and they grow in the very heart of the Languedoc appellation, on the Pézenas Terraces, on hillsides at the foot of the Cévennes mountain range and the Black Mountain.
Each terroir is individual and given over to a single grape variety thereby giving the very best to each of the estate’s wines. For this region, some of the vine varieties are exceptionally old, by way of example the Carignan vines are 75 years old.
All the different grape varieties are harvested and vinified separately: one plot per tank!
In 2005, inspired by her urge to produce wines that reflect her personality – “wines that thrill, blending classicism with surprise,” Carine Pichot took over the estate so she could stamp her personal signature on it.
2019 “Le Cœur” was a Gold Medal winner at the Paris Agricultural Show (CGA).
On the nose, there are aromas of blackcurrants and spices. On the palate, this is a full-bodied, fruity wine with great structure.
As far as food goes, this wine pairs perfectly with rib of beef and caramelised shallots, and if you enjoy rabbit dishes, rabbit served with a prune sauce also makes a great pairing. This wine will meet with the approval of dessert lovers too, as it pairs marvellously well with chocolate gâteau served with a raspberry coulis. Lastly, this is a red wine to enjoy with soft cheeses such as Bleu d’Auvergne, Brie, Morbier and also Saint-Félicien.
We advise you to open your bottle one hour before you want to drink it, which will bring out all the aromas and allow the bouquet to develop. Ideally, you should serve this wine at a temperature between 16 and 18°C.
