Baked Cod Parcels

Preparation time : 30 minutes. Healthy. Preheat the oven to 100°C. Prepare your vegetables by mixing together the carrot, fennel, garlic, olive oil, lemon juice, black pepper and salt.

For 2 servings, you’ll need :

  • 1 cod fillet weighing +/- 400g, cut in half
  • 200g grated carrot
  • 200g grated fennel
  • 2 potatoes, cooked (optional)
  • Garlic, grated, according to taste
  • Olive oil
  • Guérande sea salt
  • Freshly ground black pepper
  • Juice of half a lemon
  • Baking parchment or greaseproof paper

Instructions

  • Preheat the oven to 100°C
  • Prepare your vegetables by mixing together the carrot, fennel, garlic, olive oil, lemon juice, black pepper and salt
  • Leave for a few minutes to macerate and then drain
  • Place half the mixture on one sheet of baking parchment or greaseproof paper
  • Cut the cooked potatoes into thick slices and place on top of the vegetables
  • Place the fish fillet on top of the bed of vegetables
  • Close the paper tightly by folding over each edge twice
  • Bake in the oven for about 25 minutes – touch the fish to check that it has cooked through
  • To serve, simply open up the parcels or use a spatula to transfer the fish and vegetables onto a plate

Tip

Prepare these parcels in advance so that you can spend more time with your guests.
